Irresistible Breaded Flounder!
Although flounder can be bland, especially when looking for gluten free recipes, we are here to change that up!
Heres what You will need:
Breaded Flounder with Sautéed Vegetables
Makes 2 portions
Ingredients
2 pcs Flounder Fillet
1 cup Cooper’s Crumbs Original Four Spice Salute
1 egg, beaten
1 pc carrot, sliced
1 cup snow peas
½ pc red onion, sliced
1 cup squash, sliced half-moon
1 red small-sized bell pepper, sliced
2 pcs garlic, minced
½ tsp fresh thyme
1 tsp lemon juice
Pinch of salt
Pinch of black pepper
Oil
Instructions
- Heat splash of oil in a large size pan over medium heat. Once hot, add in sliced carrot and cook for 3-4 minutes or until carrot is slightly tender. Next, mix in squash, bell pepper, and red onion. Continue tossing for another 3 minutes. Add snow peas, garlic, thyme, and season with salt and pepper to taste. Sauté for 2 minutes or until the veggies are tender. Turn off heat then drizzle lemon juice, toss to combined.
- Season fish with salt and pepper on both sides. Add beaten egg into a bowl and add Cooper’s Crumbs to a plate. Dip fish in a beaten egg then dip it to the crumbs, make sure fish is fully coated, set aside.
- Heat splash of oil to a clean medium size frying pan over medium heat. Once hot, pan-fry fish for 2-3 minutes per side or until fish is cooked through. Serve fish with warm sautéed vegetables on the side.
