Irresistible Breaded Flounder!

 

Although flounder can be bland, especially when looking for gluten free recipes, we are here to change that up! 

 

Heres what You will need: 

 

 

Breaded Flounder with Sautéed Vegetables

Makes 2 portions

 

Ingredients

2 pcs Flounder Fillet

1 cup Cooper’s Crumbs Original Four Spice Salute

1 egg, beaten

1 pc carrot, sliced

1 cup snow peas

½ pc red onion, sliced

1 cup squash, sliced half-moon

1 red small-sized bell pepper, sliced

2 pcs garlic, minced

½ tsp fresh thyme

1 tsp lemon juice

Pinch of salt

Pinch of black pepper

Oil

 

Instructions

  1. Heat splash of oil in a large size pan over medium heat. Once hot, add in sliced carrot and cook for 3-4 minutes or until carrot is slightly tender. Next, mix in squash, bell pepper, and red onion. Continue tossing for another 3 minutes. Add snow peas, garlic, thyme, and season with salt and pepper to taste. Sauté for 2 minutes or until the veggies are tender. Turn off heat then drizzle lemon juice, toss to combined. 
  2. Season fish with salt and pepper on both sides. Add beaten egg into a bowl and add Cooper’s Crumbs to a plate. Dip fish in a beaten egg then dip it to the crumbs, make sure fish is fully coated, set aside.
  3. Heat splash of oil to a clean medium size frying pan over medium heat. Once hot, pan-fry fish for 2-3 minutes per side or until fish is cooked through. Serve fish with warm sautéed vegetables on the side.
