Breaded Zucchini Strips!

Gluten Free Breaded Zucchini Strips

Zucchini are among one of my favorite vegetables to cook with! they are extremely versatile (Great for a gluten free stir fry, great for a low carb vegetarian dish, but also they are delicious to coat in our gluten free breadcrumbs!) Additionally they have tremendous health benefits that include:

 

  • Helping to Lower blood sugar levels
  • Helping to improve digestion
  • Help your skin look better!

    What I really love about this dish is how easy it is to make. Oftentimes breading with gluten free breadcrumbs can not only sacrifice your diet but they also do not give your dish the taste it so deserves. So that's why Cooper’s crumbs are a perfect substitute for your breadcrumbs in this dish.

    Whether you are Gluten free, Paleo, Keto, or Whole30, our breadcrumbs truly complement the zucchini so well.  

    Ingredients:

    • 2 medium Zucchinis, cut into 1/4 " slices

     ( I cut mine into strips but you can also do circles)

    • 2 eggs

    • 1 cup of Cooper’s Crumbs - Any Flavor works Great with this recipe!

    • Pinch of salt and pepper

    Preparation:

      • Preheat the oven to 400° Fahrenheit.

      • Combine egg, with salt and pepper in a small bowl.

      • Pour Cooper’s Crumbs in another small bowl.

      • Dip zucchini slices into egg mixture, then into Cooper’s Crumbs and place onto parchment paper (alternatively you can place them on a baking sheet that has been sprayed with nonstick cooking spray).

      • Bake for 10 minutes, then turn over and bake for 5 minutes more or until brown and crispy.

      • Plate and enjoy!                                              

    You can use Yellow or Green Zucchini, I used green because thats what I had around my kitchen, but this recipe also works for eggplant!
