Delicious Gluten Free Meatloaf
When I think of comfort food, or meals from my childhood, I think of my mom's meatloaf recipe which she would make in a big pan. The smell of this meatloaf would travel throughout the house and as it was cooking, my stomach would let me know what it wanted!
The key to this recipe is keeping the mix tender, juicy, and obviously healthy. To keep this recipe tender, you'll want to make sure your ingredients are as fresh as possible. Specifically in choosing your ground beef. The way to keep this recipe healthy, is obvious, making sure that the breadcrumbs you use don't add 20 grams of carbohydrates per serving!
Ingredients
Meatloaf Ingredients:
- 2 lbs ground beef 85% or 90% lean or you can use ground turkey, ground chicken etc.
- 2 eggs, beaten
- 3 tbsp of ketchup, or if you are not able to have the sugar in ketchup use tomato sauce
- 3 Tbsp fresh parsley finely chopped
- 2 onions chopped finely
- 3/4 cup breadcrumbs ( Cooper's Crumbs) I like to use either the Original Four Spice Salute or the Crumbs With a Cayenne Kick
- Spices to taste, I like to use salt, pepper, Italian seasoning, and garlic powder
Meat loaf Sauce ingredients:
- 3/4 cup ketchup
- 1 ½ tsp white vinegar
- 2 ½ Tbsp brown sugar
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground black pepper
- ¼ tsp salt
